This also bugs me. When it comes to Galileo he is a Polish Scientist doing Science. When he refers to a Persia Astronomer all of a sudden it's Islamic Science. It's as if this sort of mentality is pounded so deeply in his head he can't see his own biases. Unless Galileo was doing Christian Astronomy then the Persian Scientists were not doing Islamic Science - but Science. They were Persian Astronomers, not Muslim Astronomers. Newton was extremely religious. No one in their right mind would refer to him as a Christian Mathematician and I have NEVER heard of Calculus refereed to as Christian Math.
He does make a good point that Europeans liked to denigrate and make Middle Eastern achievements appear as if they had occurred long long ago. Even if some of those achievements were relatively recent. Of course, it should be noted that ALL conquerors come up with some sort of justification for stealing and occupying other people's lands. From Ancient Chinese or Egyptians all the way up to Iraq or Tibet. Including Arabs when they conquered Persia. This makes it easier to justify their conquest. Basically they're considered an empire on decline and ripe for the picking.
Another point, it seems many if not most of the Scientists were Persian. A few were Arab. That's interesting to me. Because these are ethnicity. That's probably the reason why they're often refereed to as Muslim. Because, they probably never were united. Even under religion it appears that Persians never accepted the occupation of their land. They invented Shia Islam after all. As well as Baha'i Faith.
