That which endures......

Love endures, and so do love songs...

This is one of my favorites.

I can appreciate that the weight of all those small chunks of metal becomes considerable in total and that they would contribute to wear and tear and structural damage over time.

As a species, we have an enduring passion for good tasting food. I am enjoying a morning repast of home made cinnamon currant bread, toasted, with butter and rhubarb marmalade that I made yesterday. A cup of coffee with French Vanilla cream to accompany this treat and a good start to this day.

Music endures...

Here is an entertaining take on 'the girl in a country song'. ;)

Lettuce is a fresh vegetable that does not hold a record for endurance, but I found a recipe that turns copious amounts of lettuce into a versatile and delicious soup.

This is how it came about...

Saute 1 diced up onion and 1 stalk of celery, finely diced, in 2 tablespoons of bacon grease or fat of your choice.

After about 5 minutes, add some fresh garlic, minced, and plenty of flavorful spices. I used dill, roasted garlic and peppers and a garlic and herb mix as well as fresh ground pepper.

I whizzed about 5 cups of greens, mostly lettuce with a bit of arugula and kale, with 3 cups of water in my blender (you can use veggie or chicken stock if you have it on hand) and poured that in over the sauteed veggies and spices. I rinsed the blender with fresh water to add about another 2 cups of liquid and to not waste any of the green goodness. Then I hit the fridge and pulled out yesterday's remaining six perogies with topping and chopped them into small bits. A turkey burger patty likewise got minced and added. Once warmed through, I added about 5 ounces of condensed canned milk because I was out of cream. Snipped in a bit of fresh parsley and basil, added 2/3 cup of crumbled Feta cheese and as soon as the cheese had melted throughout, it was in my bowl and topped with fresh chopped chives.

It is history now and I am going back for just one more ladle full. OMG, did it turn out yummy! :D

(Best of all, hubby, who was looking askance at the early bright green stage of the soup, came down to try it and fell upon it like a ravening beast. I barely got my additional ladle full!)

Do you know that you can't reboil spinach? Try it sometime.

Why on earth would anyone want to reboil spinach unless it was only to add water and puree for a soup? It would reheat much better by steaming or heating in a microwave. Did you try to reboil some? Do tell us the results. :)

dunno where else to put this..
I just came up with this..

she was born with no legs,
she grew up with four legs,
she's never known two legs,
now she has six legs,
she may soon have 10 legs,
leaves me with my two,
I know two legs,
we ain't supposed to have two legs,
but I will give up 4 of my legs,
to let her have 10..

Yesterday morning we had some spectacular light for photography as the sun was rising and catching the frost on the trees. I was just home from work and as I set out to feed the horses I took a few minutes to take some pictures.

Above, my endurance mare Caramel is drinking the warm water that I had just placed in her bucket.

Below is one of the reasons I have not been around the forums too much of late. Miss Daisy arrived just a month ago and I have been quite busy spending some time with her and teaching her proper conduct as befits young equines in the interactions with humans.

The third picture is Threebee, another young horse in my stable, just turned four in September and doing very well in her training.
