It's mostly lack of imagination. If you want to fill in a gap in your song lyric, adding in a "yeah!" or "baby!" is a tried and true method. Lazy, but not uncommon.
It's because those words are very versatile and very, uhm, vowel-esque? Vowel-icious? It's basically like humming or just singing non-words to fill in space.

I suppose if you count songs like the Killers' "Somebody Told Me" or Nickelback's "Figure You Out" you could say they're about love, but it's pretty dysfunctional love.
