roast chicken

    i am sitting here eating this beautiful chicken and i was wondering how do other people do theres

    this one is stuffed with squeased out lemons (squease them over the chicken) and rosemary. seasoned and roasted in an oven with a tray of water in it and its so juicy and the skin is so crisp

    nah seriously of all my dishes i am always complemented whenever i do a chicken dish. No matter what i do it always comes out perfect, wish i was as good at the other areas of my trade and i would be runing my own kitchen

    just to prove that fact i was doing a test for poltry at school and i had smothed my chicken breast in tandoori paste and put it in the oven and compleatly forgot about it. After preping the rest of the ingrediants for the meal i thought "oh fuck i have totally blown this, my breast will be tost". I open the oven and pull it out thinking it will be totally burn and it was juicy as. The paste had protected it like the crumbing dose when you deep fry

    thats what i mean. Its not a skill i have learnt but whatever i chose to do with chicken just works

    anyone can burn it if they try hard enough. i just ment i have a tallent for cooking chicken.

    One of these days, I'm gonna visit Australia, and I'm gonna hafta come over to yer house and have some of yer chicken!

    anytime
    i do this really nice one (the one i was doing for the test). its served with rice, pupadams, and rita

    its so nice

    also the roast chicken i did was an adaption of one i use when i am making chicken soup. the difference is that i steam it when its for soup cause i want the chicken as moist as possable so when i tear it up to go into the broth its mostly juice

    then there is my chicken kievs or the ones i do that are stuffed with prawns if you like seafood

    im a chef. I can make restraunt meals at home. Only problem with that is i really hate cooking for myself unless im REALLY in the mood for something. I spend all day cooking and the thought of coming home and do it... Odly enough i LOVE cooking at home if i can do it for someone else, so my GF gets a lot of special meals which i want to try out. Things like pan fryed gnoccie is one of my fav things to make and when i have days off i will just spend all day making dinner. i prep everything like im at work so that its all ready hrs latter when whoever im cooking for comes home

    I like to marinade my chicken breasts in my own "secret ingrediants" overnight in the refridgerator in a sealed baggie then slowly fry it in sesseme oil and butter on low heat.

    I go the lazy route:
    1)buy chicken
    2)put on pan
    3)cover with the following

    5 patts of butter
    salt
    pepper
    garlic
    onions
    halepeno peppers

    3)oven at 350
    4)"baste" with a spoon and the drippings in pan @ ~20 minutes in
    5) eat after ~1 hour

    I spend the rest of the time watching TV or writing, -10 minutes for stovetop right before I pull out the chicken.
