I've never heard of this use for osmosis. Supposedly this guy is using Vodka and sugar to turn the inside of a sealed banana into a Jello shot: http://www.metacafe.com/watch/734784/gel_o_shot_inside_a_banana/ That's a pretty cool trick, but what is the science behind it?
I want to try it with Blavod - that would look cool. I never drink it anyway, and it just sits in my freezer.
The trick is just what you said: osmosis. The peel is very permeable and the fruit has no hard core and also contains no alcohol.
