They detect the "prophets" of the force and deduct that the force exists and by how many "prophets" there are, they deduct the strength of the force in an individual.

This might be a bad analogy, but here it is:

We can't see dark matter, electromagnetic radiation can't detect it, but we can sense it there through gravity.

How can that be, when they analyze the midoclorians with technology?! through blood test if i remember Obi Wans in that scne correctly. He took a sample!

The UFP have ships that would get buttfucked by modern day tanks. This isn't a joke, we see the equivalent of a tank round buttfuck the Defiant, a ship that makes GCS hulls look like paper.
