Seven of the schools that make up the Ivy league were founded before the American Revolution - one each from the northern colonies. The eighth school (Cornell) was founded after the civil war. What defined the Ivy League so that Cornell became a member?

There is nothing to be defined. They just decided to have Cornell join the league. The Ivy League is like the Big Ten or the Pac-12.

Edit: The ivy league does have academic standards and such, but the point is they could have another school join now if they decided to.
    From wiki:
The Ivy League was officially founded in February 1954 by extending that agreement to all sports. Between 1956, the year of the first round-robin schedule in football, and 1995, Dartmouth won the most Ivy League championships, eight, and tied for another eight.

    You think that's strange?

In 1685, a Trappist monastery in France started brewing their own beer to comply with an edict from the local abbott, who ordained that monasteries had to be self sufficient. So they started making beer and selling it to maintain their monastery and support some local charity. For the next 300 years monasteries in France and Belgium continued the tradition of brewing Trappist beer. They were very strict about who could brew Trappist beer, always requiring monasteries follow rules on self-sufficiency and nonprofit, and being careful to only approve new local monasteries.

Then, in 2013, a new Trappist brewery opened in . . . Connecticut.

Not just football, sports in general.

Well, if Americans fund hockey, because as Canadians we know you suck at it, it mandates some respect.

Based on my memory (B.A. Cornell 1950) the Ivy league existed before 1954. In its early days it had only seven schools (Brown was not in it).

Cornell sucks at almost every sport except hockey. They are usually in the top tier of teams in the US. Funny thing about that, many of the hockey players have similar accents and say things like, "nice game, eh?" . (Cornell, 89)
