    Well, because
    - some of it names names of citizens whose privacy would be violated, and
    - some of it would reveal military technology and procedures that could compromise national security, and
    - some of it would highlight locations that would serve as a lightning rod for cranks and fans, possibly resulting in safety and trespassing issues,
    just for a start.

And none of it invalidates or questions the fact that at best, scientifically and logically speaking, all we have is more garden variety UFO's!!!
But I mean what would you expect from someone who seriously suggests an atomic war on Mars by aliens, a dark side of the Moon with green cheese and little green men!!!

"Because most people don't want to look like an idiot" does indeed except those people who eagerly seek after that title.

    Well someone hasn't.
    No.
The FOIA is a legal document[1] that requires the full or partial disclosure of previously unreleased information and documents upon request.
Perhaps you meant that some documents released upon request under the FOIA have redactions - the FOIA itself doesn't refer to UFOs at all

    1 Actually several documents, but...

Millions of documents about UFO'S by the CIA .

    So what?
    The FOIA doesn't have redactions.
(Oh, and do you actually have a valid source for that claim of "millions" or are you just making it up?)

The documents on UFO's do .

Not by the FOIA. But by the CIA . Redactions are by the CIA and others .

In other words your initial post was incorrect.
So you don't actually have a valid source for your claim of "millions". Got it.

So are unaware that the CIA released millions of documents on this topic .

Repeating an unsupported claim doesn't make it valid.
    CIA website:
My maths may not be quite what it was but I think 1,729 falls slightly short of "millions".

    What claim is un-supported ?

    Your CIA website is ?

    Two claims in fact:
    1) that the CIA has "Millions of documents about UFO'S."
    2) that "the CIA released millions of documents on this topic ."
Er, it's the CIA's website. Surely the words "CIA" and "website" gave you some sort of clue. Oh, and the fact that the words "CIA website" are a link to that same site.
I do find it amusing that you make unsupported claims but as soon as I make a counter-claim with actual (i.e. not pulled-directly-out-of-my-arse) figures you decide that sourcing is a good thing...
