I would guess it's not just about what you study but also your backgrounding. By all means you could look at Neurosciences, in fact you could probably find that you could work for a "third-party" company that has a defense contract as a consultant. It's usually prudent to consider to work for companies to build up a corporate repore as well as gain experience in the subject choosen. Afterall it's not just Grades on a resume that they would be interested in. To my knowledge most people don't just decide to work for a department engaged in active foreign policy, mainly because there is alot attached to those sorts of jobs, it's not all "Jack Bauer".
