Breeding endangered species

A similar effort (and an easier one for ordinary people to achieve) is to raise Heirloom strains of agricultural products. Many types of corn, tomatoes, etc are in danger of disappearing because they are no longer competitive with modern hybrids.
If you want animals, try breeds of livestock- there are chicken breeds in the same situation.
