Pedigree dogs are an example of the inbreeding and example you meant, all pedigree dogs are inbred, that's how they produce the same conformation within them. So yes, the more you inbred something, the more you're restricting the gene pool, and so the less variation of traits you will have.

No. I hear mongolians have blue/green eyes and some have blond/light brown hair. Yet they arnt caucasians.

The way people look is of no issue, only a idiot would worry if we all looked the same or all looked different. The real issue is to see if we can all act the same.
And so the conclusion must be that: Groups like blacks, Asians and hispanic's have a far greater amount of interbreeding through out history when compared to caucasians.
In addition, dark hair/eyes are dominant traits. As such, blue eyes and fair hair are more of an indicator of inbreeding.

Hair and eye color are relatively tiny differences when you consider the genome. In fact, Africans do look very different, there are the small pygmies, Somalians with narrow faces and long noses, west Africans with broad noses and round faces, North Africans with arabic features, ect.
Look your only kidding yourself about this. The physical diversity within the Caucasian race is overwelming greater when compared to black African.
