This may be against site rules as some advertisement, but it was an orgasm on my tongue.

I used brown flaxseed bread and marble cheese (actual real cheese not some processed shit).

One clean side of bread before I laid the cheese

I put Gulden's between the cheese and bread before putting it on the grill. Sometimes dill pickle slices before I put the two halves together. (Fried pickle is probably an acquired taste. )

I love flaxseed bread. The older I get, the older I like my cheese - maybe my taste buds are wearing out.

I've never tried mustard or pickles on grilled cheese. It might be worth a try though, given the taste bud thing.

    Jalapeno mustard is good, too.

But to save yourself a fortune in failed experiment, take regular mustard and add stuff to a tablespoon or two to try it out. Same thing works with ketchup.

I do use ketchup with cheese. And I do have regular mustard, bread and cheese, so there's nothing to hold me back.

I buy spice "samplers" for this kind of experimenting. They usually have 6 -12 types of spices, just a tablespoon or so each. Less waste with the ones I don't like.

Recipes for Welsh rabbit (or rarebit) involve grated cheese, mustard, Worcester sauce and stout, milk or even beaten egg, to loosen the mixture. Mustard is very important. Cheese needs to be a strong, hard cheese, e.g mature cheddar or similar. I use something called Lincolnshire Poacher. Needs a dressed salad with it, to cut the richness.

They already have flax seed to loosen the mixture

Grocery store near me has spices in the bulk section. I can buy as little or as much as I want. Buying seldom used spices by the teaspoon is a real waste saver.

Yeah, some of my spices were originally owned by Admiral Sir John Hawkins.

In a pinch I will slap some cheddar on a slice of bread, zap it in the microwave, and smother it with blue cheese dressing. Yum.

Try grilled cheese with French toast on 1 side.

Toast your bread and put the cheese on it while it's still hot.

Well, it's impossible not to win...

My dad used to make fun of me and my brother: "You pour melted cheese on sawdust on you'd eat it".
