You're probably posting this in the wrong sub-forum, but considering that you have tried to get responses to your philosophy in other sub-forums, I guess I can understand you trying it here. The phrasing of your OP raises a question that you could clarify for me. When you say "because one can be observed at a time", are you referring to a given three dimensional event at a point in time?

We can model the universe, in many ways, and with as many dimensions as you want. But simplicity is closest to perfection, and 3 plus 1 is the minimal set we know of, so far.

 

This statement doesn't make any sense. If we could observe 2 at a time, how many dimensions would the universe appear to have?

So are you trying to say that we can only observe one temporal (time) dimension at a time? And if we were capable of observing 10 dimensions at a time it would then be 10 time + 3 space = 13 dimensions? If so, why would we be restricted from only observing one temporal dimension at a time?

 

I was referring to both spatial and time dimensions so I partly agree with you. I'll work out another response that objectively goes into more depth.

 

If we could observe all dimensions at once we would enjoy a kind of omniscience.

I see, then I think what you mean to say is that we can't observe more than a single point in spacetime, not that we can't observe more than one dimension at once. I agree with you, if we could observe "all points in spacetime" then we would be omniscient.
