In defence of organ meats

    I am absolutely forced to post this after reading the cataclysmic denouement of chorizo and andouille in another thread.

    Now while I have not eaten either, I am appalled, yes appalled [pauses, apalled has two p's? crap whats happened to my spelling???] at the utterly ignominious position occupied by the yummy bits condescendingly referred to as refuse!! by the intelligentsia who seem to have lost the art of appreciation of the sweetbread and spleen, among others.

    As a dedicated lover of mashed brains and tongue sandwiches, I wish to protest this utter disregard for an entire branch of culinary arts that have a long and glorious history in the annals of time.

    Please share your favourite organ meat preparations here.

    I'll eat goose liver in pâté and bone marrow. I also enjoy fish and chicken embryos. I've eaten tripe, hearts, and the livers of various animals, and sheep's brains. I found all of them repugnant. Now, I don't want a Lori-esqe reply that I'm somehow evil and discriminating against other animals. I fully support their rights to be eaten, in any way, by people and would never interfere with their equal treatment. It's just that, I don't particularly like them. They don't do it for me.

    I can't even eat chicken organs (like feet, heart, head, etc; I know people who do eat them). And I can't stand lamb or goat either. Let alone their organ meats

    That's why it's important to cook them so they're tasty, so they are not wasted.

    I might eat them if I don't know them when I eat them. Like, if the original shape, taste and smell are completely gone.

    kira: I'm surprised, don't they make organ meats in traditional Indonesian cuisine?

    Yes, they do make, but I really really don't like them. The hardest part is in Ied al-Adha, you know the muslims festival in which goats and cows are sacrified as part of the festival. I was always go camping up in the mountain or in some remote areas with some friends, just so I can't smell them. I can literally puke!

    I never did like beef liver cooked by my parents/grandparents/friends...I don't really like meat to begin with. Sometimes I got cravings but its not really the disgusting part that keeps me away, its just that meat seems to heavy for me.

    Heart, liver, tongue, gizzards, stomach lining, bone marrow, - all good. Brains, of anything except sardines, I have always avoided - something wrong with the idea.
