    I'm obsessed with this tribute to American meat-obsession. I have a good recipe, but I'm desperate for an over-the-top, smack yo' momma' good one.

    Mushroom soup Meatloaf

    mushrooms, chopped
    2 teaspoons butter
    1 1/2 pounds lean ground beef
    1/2 pound ground pork (NOT debateable!!!! Adds so much flavour)
    1/2 medium finely chopped onion
    1 can mushroom soup
    1/2 cup fine cracker crumbs
    2/3 cup quick cooking rolled oats
    1 egg, lightly beaten
    1/4 teaspoon pepper (salt will be in the cracker crumbs)

    Saute mushrooms in butter, mix together with other ingredients and cook like any other meatloaf. Let set for about 15 min before slicing and serving

    I just spray a muffin pan with Pam and make individual mini meatloaves. I am currently trying to perfect a salsa meatloaf.

    LOL, well, I'm still working on the salsa one.
    Do you use ground pork in your meatloaf?

    I have a recipe that calls for 1/3 pork.
