According to christian beliefs, mankind descended from Noah, his wife, his 3 sons and their wives. Is it possible to have this many ethnicities just from these 8 who were descendants of Adam and Eve?

It's not possible to have a stable gene pool, much less variety, with just 8 members.

You have Noah, his wife, his kids, his sons' wives, his daughters' husbands, thier children, I think it was three or four generations. It wasn't eight people, though.

Also, would there be time for evolution to re-occur in the Orient nations? The skulls of people in China VS the skulls of Sub-Saharan Africans are different, and they appear directly after the flood occured.

it's just a story bro. just like they have 2 creation stories. and it's not possible, even it it was, there wouldn't have been enough time for the world to repopulate and for that much diversity to come. there is an interpretation that the world didn't flood, but only an area/city/country flooded and it's population purged. however, it really doesnt matter since it's all a story and therefore, bullshit.

Exactly! I treat the stories of the bible as if they were myths(sacred stories) but I don't understand how christians can blindly defend the book as if it was the absolute truth.

    A) Anything and everything could descend from two people. Read "The Portable Darwin" and you'd understand this. It's a simple nature/nurture thing really - the way you're raised affects you AS WELL AS where you are raised. A river can divide people, over time it could grow to a sea, and climates can become drastically different, or simple nomadicness could take place. But I digress.

    B) It's a story.

And so absolutely no one can interpret it correctly.

Or we mighthave, ya know, have evolved seperately from various lower lifeforms that were similar to eachother, then spread out, and the various races evovled slightly with their environments better.
