Why not say that you already have a B/F or G/F?

Become a nun, can't beat that excuse and to top it off become a nun for real....foolproof excuse, never fails.

Until he presses the issue do nothing differently. If he does, tell him you think he’s great and you love him but you’re not interested in anyone right now. If he asks why tell him you don’t wish to discuss it. Repeat as needed.

ask your self why you are searching for anything but what you actualy think

do you wish t only give him bad news ?

you told us the good news and the bad news ...
tell him the bad news first.. as you percieve it
he may already have a girlfriend or some girls chasing him
how would you know

empathy!
think as you would like to be told of such a thing
and what the good points are
so far it is only your assumtion that there is bad news in you not liking him enough to shag his brains out!
maybe ... justmaybe it will relieve allot of tension from the potential relationship so you both may get on with chatting
maybe he feels nervouse because he think you might like him and he does not like you in that way
it could be both sides of the fence!

i think i understand how you feel in that way .. sorta :)

given the fact that you seem to "hit it off" so well
i would strongly recomend you say to him that you are surprised at how much you too can "gossip" (hehe)
and do not wish to lead him on in any romantic way
and keep the comment fairly brief and to the point and dont linger on it
so you both may get on with having a good time chatting :)
