Try searching for info on "housekeeping genes (http://www.biology-online.org/dictionary/Housekeeping_Genes)".

If you think there are only a few housekeeping genes, you are in for a shock. Here is a list of human housekeeping genes.....

During development there are many control genes and even some 'master' control genes. If you activate the master control gene for the eye on a part of the body where it is normally not active then an extra eye will grow there (well, for flies at least).

How does it all work?

That is rather complicated.
