i noticed this quite recently. fruits like apple, banana etc. have a uniform flavour throughout, in the sense that, when we cut up an apple and eat it in pieces, or slice a banana into different pieces, the different pieces taste the same, or almost the same. if there is any difference in flavour it's extremely small.

not so for mango. if we cut up mango and eat it, (ripe) some pieces are sweet, while others have a little less sweetness, while others have a sourish flavour. i've never eaten a single mango which has had a uniform flavour throughout. why is this? could it be because the fruit is bigger than apple or banana, or because of something else?

Maybe it is exposure to air? Maybe mangos are more sensitive, and some areas rot quicker than others, so a sugary taste develops in some places, more than others.
