I forgot why that guy told Harvey Keitel he was a cop.

Because they were friends. They really bonded in the car on the ride to the warehouse. Might have even had some oral sex (kidding).

Mr. Orange was an undercover cop. He killed Mr. Blonde who had been torturing the captured cop. The reason he gave to Mr. White and Pink was that Blonde had gone nuts and was going to double cross everybody. When Eddie and Joe showed up, they knew this was bullshit as Blonde was as loyal as the day is long.
Joe said that Orange was a cop and was going to kill him.
White pulled out his gun and threatened Joe.
Eddie pulled his gun out to point at White. Uttering the famous line: "Stop pointing that gun at my dad!"
Joe shoots Orange.
White shoots Joe.
Eddie shoots White.
White shoots Eddie.
Pink takes off with the diamonds.

Then. After things are a bit calmed down, White, still alive, cuddles up to his butt buddy Orange. Orange feels obligated to tell him that he's a cop. After all, the guy just basically died defending him.

Thus, Orange's dilemma, at the end, is that of any narc. To go into such deep cover that you identify with your victims.
