It really makes you wonder what we are really eating sometimes. :bugeye: Rotting cheese recycled in Italian food scam: report ROME (AFP) - Eleven thousand tonnes of rotting or out-of-date cheese from European dairies were mixed with fresh products and resold, according to an Italian police investigation reported by La Repubblica on Friday. Instead of destroying the cheese, some 40 Italian, British, German and Austrian firms reworked them using four companies headed by a Sicilian businessman. Three of the companies were based in Italy while another was based in Germany. The rotten cheese, containing mice droppings as well as residue from plastic wrapping and ink labels, was mixed with fresh cheese products and used to make cheeses such as mozzarella and gorgonzola. A total of 11,000 tonnes of cheese was recycled in this way over the past two years and the four companies involved achieved a turnover of some 10 million euros (15.6 million dollars). The sale of the new products would have brought in hundreds of millions of euros, according to the daily. The investigation by a special police unit last lasted two years and three people have been arrested. this is really discusting and i hope they are procuted to the full exstent of the law for this. To be honest when i first read this i thought "so?" because i thought you just ment the out of date cheese with no contaiminates. I had to wonder if this wasn't there way of keeping the line of bacteria alive (kind of like they do for sour dough bread) but when i finished it... it sucks, why do you think i am changing careers. That being said its the politics i hated not the hygine. At the very least everywhere i have worked, the hygine standed have been pristine. Knives are always washed after use, boards are colour coded by use, green for veg (though sometimes with a specific board for fruit), red for raw meat, yellow for chicken, blue for fish, white for cheese and brown for cooked meat. The place is scrubed clean all the time before and then sterilised. you could perform surgury on the benches without infection. FIFO policies and everything dated and labled ect. That being said i wasnt as impressed with the pizza shop i worked at for a while. There standeds were WAY to lacks. The irony was that they had a policy of medical type hand washing but there standeds in other things were apaling To be compleatly honest, as bells example shows most food posioing happens in the home and the second most common is take away food that isnt stored correctly. The third most common is contamination which occurs before the food even reaches the restraunt. Food inspection policies are in my opinion pritty good, random checks wether compaints are made or not. Futher checks if they are. The worst problem i have seen in a restraunt has been vingar flies which are just imposable to iradicate.
What is cheese any way but spoiled milk, look up Casu Marzu, Brie, Camembert, Roquefort, Stilton, Gorgonzola, Limburger, all of them are forms of rotting to age the cheese.
