We're trying to eat healthier, so I bought whole grain noddles, instead of regular. But I'm looking atthe sides and this is what I see
Regular:
Calories - 210
Fat - 1 g
Sodium - 0 mg
Total Carb - 41 g
Fiber - 2 g
Sugars - 2 g
Protein - 7 g
Whole Grain:
Calories - 190
Fat - 2 g
Sodium - 15 mg
Total Carb - 40 g
Fiber - 5 g
Sugars - 4 g
Protein - 8 g
How is the whole grain any better for me than the regular??
I think whole grain bread shines when it comes to vitamins and nutrients. Have you compared those two?

I care about fat and carbs (sugars).
Well less isn't necessarily better. The fats and carbs in whole grain bread as opposed to regular might be of a type that's better for you. The key to proper nutrition in health isn't so much less calorie intake as it is proper calorie intake.
I tend to avoid breads altogether though, except on my diet break days, so I can't really say for sure anything specific about them.

the more refined the grain is the easier it is to digest the carbohydrates, therefore whole grain provides a consistent long lasting energy, while refined provides only a short spike of energy.

Not just vitamins...most of the important minerals like magnesium are found in whole grians as well.
Most people are magnesium deficient.
