According to christian beliefs, mankind descended from Noah, his wife, his 3 sons and their wives. Is it possible to have this many ethnicities just from these 8 who were descendants of Adam and Eve?

I treat the stories of the bible as if they were myths(sacred stories) but I don't understand how christians can blindly defend the book as if it was the absolute truth. Read "The Portable Darwin" and you'd understand this. It's a simple nature/nurture thing really - the way you're raised affects you AS WELL AS where you are raised. A river can divide people, over time it could grow to a sea, and climates can become drastically different, or simple nomadicness could take place. But I digress. B) It's a story.
