Imagine my network is filled with data, video and voice traffic.
I wish to segregate then and know what % of each uses my network traffic?
I am especially interested in looking for RTP traffic that's mostly used for audio/video conversations.

Use a network sniffer to capture the traffic. Most decent sniffers will provide at least a basic protocol analysis that tells you the percentage for each protocol.
